Crustacean Beverly Hills is a rare restaurant, whose origins can be traced back to one woman’s flight from Communism. This is just the beginning of chef/owner Helene An’s story; after her family arrived in America, they opened what became a series of lauded restaurants, culminating in Crustacean Beverly Hills. Both the design especially the dramatic, glass-covered “Walk on Water” koi pond—and the fusion cuisine pay homage to An’s family life in Frenchcolonial Vietnam. Wine director Chris Bradford finds a myriad of opportunities for wine pairings, particularly the chance to highlight German and Alsatian jewels: once you’ve tried the steamed crab from the Secret Kitchen (only family members allowed!) with Pfeffingen’s 2007 Scheurebe Spätlese, you’ll understand the allure of An’s cooking.
