Hellenic cuisine is the hallmark of Dio Deka in the Hotel Los Gatos, where the restaurant’s seven partners take pride in promoting the bounty of Greece and the Mediterranean. Chef/partner Salvatore Calisi sources seasonal ingredients alongside prime Greek products, such as fish, cheeses, olive oil and oregano. One of Calisi’s great joys is to create Greek-inspired dishes that highlight the plethora of fine Greek wines. Wine director Vagelis Papazisis pairs the chef’s signature dish Paithakia—mesquite-grilled, grass-fed lamb chops—with Château Semeli’s 1998 Kokotos Cabernet-Merlot blend from Attica. After dinner, don’t miss a cup of Greek coffee, heated in a copper pot over a bed of hot sand. It’s all part of what the Greeks call filoxenia, the country’s term for hospitality. One meal and a guest goes from stranger to friend.
