Vivere is the fine-dining option in the trio of restaurants that comprise the landmark 82-years-young Italian Village. Though Vivere made its debut in 1990, the Village has occupied the same spot since 1927, and so has its cavernous 40,000-bottle wine cellar. Three generations of the Capitanini family have operated the restaurants over the years; the current generation, siblings Al and Gina Capitanini, continue the tradition of excellence. Executive Chef Robert Reynaud applies contemporary technique to Old World Italian favorites, which allows Michael Taylor, wine director, a broader reach when suggesting pairings. Try the dolcetti di funghi con prosciutto (porcini filled pasta with crispy prosciutto and spiced rosemary reduction), paired with Elio Grasso’s 2006 Gavarini Nebbiolo from Langhe in the Piedmont.
