“The short rib is our best-known dish,” says Jeff Taylor, the wine director. “The meat is cooked sous vide in aged beef fat for two days, and then seared on a bintochan grill. The result resembles the most luxurious, flavorful steak.”

Corkage Policy
The restaurant charges $50 per bottle, with a four-bottle limit.
