The Wine Program
The 135,000-bottle wine cellar concentrates on Bordeaux, Burgundy, cult California, Italy and Spain, with a whopping 9,100 labels. The collection, valued at more than $25 million, has been assembled over 50 years. It features deep verticals (including more than 100 vintages of Château Latour, starting with 1863), many in large format, as well as verticals of Cheval Blanc, Ausone, Haut Brion, Lafite, Margaux, Mouton, Pétrus and others, nearly all extending more than half a century. Many rare bottles, such as Le Pin and Lafleur, also populate the wine cellar. Some 40 wines by the glass, wine pairings for the tasting menus and wines by Coravin round out the offerings.

Favorite Dish
The Violet Crumble 09 dessert is chocolate sorbet, vanilla ice cream, housemade honeycomb crumble, dried chocolate mousse crumble, vintage chocolate grounds and crystallized violet petals—a play on the Australian candy bar.

Corkage Policy
The fee is $50 per bottle.
