“This is Nerello Mascalese, a grape that is a lot like Pinot Noir and Nebbiolo,” says Wismeier. “It’s rich with ripe fruit and finishes stunningly, with layers of minerality. It pairs perfectly with the game on our menu along with other classic Creole dishes such as turtle soup.”

The Wine Program
“The wine program at Restaurant R’evolution is focused on part of the seven nations of Creole cuisine, with France, Spain, Italy and Germany well represented—France the most,” says Molly Wismeier, the director of wine and spirits. “We feature a lot of biodynamic producers, particularly with a significant amount of age, and Champagne out of magnums in our by-the-glass program.”

Corkage Policy
Corkage is $75 for each 750-ml bottle, with a maximum of two bottles per visit.
