The Wine Program
The cellar at this classic steakhouse was built over a 40-year period, yielding an extensive collection from the worldâ€™s classic estates, with particular emphasis on collectible California, Northwest and Bordeaux wines. There are over 50 by-the-glass pours that span red, white, sparkling, Port, Madeira and dessert categories, and a total of 900 labels (many wines date from the 1960s).
The 20-ounce bone-in rib-eye is custom dry-aged on the bone.
Corkage is $20 for a 750-ml bottle.
