Cave Coopérative 2009 Vin des Seigneurs de l’Enfer Mayolet (Vallée d’Aoste)

The Wine Program
This intimate, 50-seat restaurant has cultivated a streamlined list of 160 selections, with 25 wines by the glass. Small-production Italian vintners are a focus of the program, including lesser-known grapes like Pelaverga and Timorasso.

Favorite Dish
Smoked fettucine with pancetta, sea urchin and a quail egg pairs beautifully with a Vodopivec Vitovska from Carso, Friuli. “This is a white wine made in the spirit of a red wine, with natural yeasts and skin contact allowing for the tannins to complement the smoky flavor of the pasta and pancetta and decadent texture of the sea urchin,” says Shelley Lindgren, the owner and wine director.

Corkage Policy
The fee is $30 per bottle, waived with the purchase of a bottle from the list.
