Calder Wine Company 2011 Meyer Vineyard Charbono (Calistoga)

“I just added the Calder Wine Company Charbono to our wine-on-tap system,” says Turnbull. “Full of cherry pie on the nose, the wine is woodsy and balanced, with a slightly savage (in the wild sense) perfume.”

The Wine Program
The program is California-heavy, balancing well-known producers and hidden gems from Napa and the surrounding counties (along with a few international selections). There are eight rotating wines on tap, 350 bottle selections and 25 wines by the glass that change throughout the year.

Favorite Dish
A signature dish is Niman Ranch grilled-pork tenderloin with creamy grits, Bloomsdale spinach, Sherry vinegar, rhubarb compote and fried-pork rind.

About the Team
Sommelier Scott Turnbull was a DJ and had his own show. “I played obscure indie rock and electronic music for what I’m sure was a huge audience,” Turnbull says. “I got into wine while teaching English in a French high school in the Rhône Valley. I had intended to become a French teacher when I got back home.”

Corkage Policy
The restaurant charges $20 per 750-ml bottle, and $40 per magnum. The fee is waived for each like-size bottle purchased from the wine list, as well as every Wednesday with dinner.
