“All of the wines on the list have been made in an environmentally conscious manner,” says Joshua Rademacher, the beverage manager. “Not only is this smart farming and winemaking, but it results in wines that are more expressive of the land they’ve grown in. We believe that wines made with respect for the environment simply taste better, and express their sense of place more accurately.”

Favorite Dish
“The torchon of Hudson Valley foie gras is an absolute must for the wine and food lover,” says Rademacher. “The accompaniments change seasonally, but the torchon is always prepared precisely, simply poached in Moscato with a touch of ginger. The richness of the foie gras lends itself to Alsatian whites, crisp Rieslings or fruit-forward Vouvray.”

Corkage Policy
It’s $25 per bottle, and wines can’t be on the list.
