“The goal at The Catbird Seat is to expose guests to new wine regions, styles and producers, as well as pairings that some might consider unexpected, such as saké, beer, cocktails and mocktails,” says Adam Binder, the beverage director.

Aged duck with grilled apples, endive and fresh juniper is a unique and flavorful dish.

“While guests could bring in their own wine, that’s not what The Catbird Seat is truly about,” says Binder. “It’s about exposing guests to new flavors and wines through a standard or reserve pairing.”
