1811 Tokaji Esszencia
“[It’s] from the year that Napoleon’s army passed through Hungary on the ill-fated attempt to take Moscow,” says Zimmerman. “A bottle of extreme rarity and perhaps the platinum standard of Esszencia of all time. It’s $22,000, and its twin in our cellar was sold to an anonymous collector in Great Britain last year.”
The Wine Program
The restaurant has its own farm and serves only foods of the greater Pacific Northwest in 21 thematic, nine-course dinner menus each year, with each menu paired to five or six Northwest wines. The list includes 4,280 wines from around the world, along with rare offerings by the glass, such as “a 1946 Toro Albalá Don PX Sherry, and a 1945 Massandra Rose Muscat from the cellar established by Nicholas II of Russia, a fabulous Crimean treasure from World War II,” says Ron Zimmerman, the founding chef and proprietor.
Dishes are seldom repeated, though creative, seasonally appropriate dishes have included seared Weathervane scallops with crispy tarragon chicken skin and frothy carrot juice.
About the Team
Sommelier Joey Lopaka offers guests a nightly overview about the Pacific Northwest-paired wines, giving a colorful history of the vineyard, winemaker and why the wine was chosen. “People enjoy his unconventional wine descriptors, such as ‘aromas of tennis balls or yoga pants,’ ” says Zimmerman.
Corkage is $35 per 750-ml bottle, with a two-bottle limit per table.
