The Wine Program
The cellar holds 2,900 bottle selections, while the wine list offers 239 labels,16 of which are available by the glass. They specialize in producers in Washington State who seek out local boutique wineries. Every week, the restaurant partners with a local winery in its “Winery of the Week” program, where winemakers serve as guest sommeliers and pour one of their wines by the glass.
Wine lovers should order the Red Boar Farms pork belly with heirloom beet agnolotti, local aged balsamic, lettuce and compressed pear.
About the Team
Antonio Campolio, the executive chef, is a certified canner, which allows him to can local products to serve at the restaurant all year long.
The fee is $15 per bottle for a 750-ml bottle, $30 for a large-format bottle. It’s waived on Wine Down Wednesday.
