“The Frank Cornelissen 2010 Contadino is an incredible blend from Sicily,” says Zutant. “Nerello Mascalese is the base for the blend, but he adds in some whites like Grillo to lift aromatics. It’s interesting stuff because he doesn’t add any sulfites, so the wine is very volatile, but it also opens up crazily.”

The Wine Program
The tightly edited program of about 75 bottles focuses on small, family-owned vineyards and leans toward the natural wine world, with a strong presence of Italian and Eastern European offerings along with selections from nearby Virginia.

Favorite Dish
The chicken liver crostini or rabbit sugo with Domaine Dujac 2011 Morey-Saint-Denis is a hit. “Easily one of the best producers of Burgundy ever,” says Sebastian Zutant, a co-owner and beverage director. “Both dishes are delicate, yet earthy and gamey, so they need a lean, lacy, elegant Pinot with loads of acid to balance it.”

Corkage Policy
The fee is $20 per bottle, and it can’t be on the list.
