Featured Wine
“Chateau Fonplégade 2008 St.-Émilion Grand Cru Classé is one of my go-to wines,” says Wamhoff. “It has a great story: An American couple buys a French château and turns it around, hires oenologist Michel Rolland and voila, a wine with fleshy, fruit forward flavors of the New World with the classic backbone of Bordeaux.”

The Wine Program
Small, boutique wineries dominate the list of about 150 labels, foregoing large, nationally known producers. There are 30 wines available by the glass, and opened bottles are preserved with argon to ensure freshness.

Favorite Dish
Chef Rex Hale prepares a spit-roasted, peppered local duck with truffle honey glaze, spring greens and roasted golden beets. For pairing, the beverage director, Patricia Wamhoff, recommends the Château Fonplégade 2008 St.-Émilion Grand Cru.

Corkage Policy
The fee is $15 for each 750-ml bottle.
