The Wine Program
The focus is on small producers, whether American or European (the list leans slightly toward the Old World). The list is comprised of 500 bottle selections, with six whites and six reds by the glass, along with three sparkling wines, one rosé and four dessert wines.
The signature dish is seared scallops and foie gras, served with a cider-vinegar gastrique. “I pair that with a Hilberg-Pasquero 2011 Barbera d’Alba, a wonderful and refreshing biodynamic red wine,” says beverage director/sommelier Roger Dagorn. “This dish needs a lighter, more fruit-driven red wine with no tannins.”
The fee is $55 per bottle.
