The Wine Program
Showcasing imaginative Nuevo Latin cuisine, the menu features the flavors of James Beard Award-winning chef Douglas Rodriguez, who takes traditional Latin American dishes and reinvents them using European and American cooking techniques. Fittingly, the wine program is exclusively South American, including offerings from Argentina, Chile and Brazil. Suggested pairings include a sparkling Mendoza Malbec with ceviche, including the restaurant’s Millionaire Tacos (lobster, ahi tuna and hamachi yellowtail in a yucca shell).
Fiery Nuevo Latin cooking (think shrimp chicharrón with pickled jalapeños) and an all-South American wine list make this eatery a hot ticket for wine lovers. The name means “desire” in Spanish, after all.
About the Team
Born in Northern Mexico, Roberto Madrid, the head chef, specializes in creating dishes that highlight the flavors of the American Southwest, with an emphasis on using locally grown produce and indigenous recipes.
