The restaurant features an extensive list and three tiers of wine-pairing options, alongside nonalcoholic options. Additionally, the restaurant can order virtually any wine or vintage worldwide when given three weeks’ notice.

Favorite Dish
With Coravin technology, which allows the restaurant to offer wines by the milliliter, selections can range anywhere from $140–6,000.

“Because of their value and rarity, we use the Coravin and a scale to accurately pour a precise amount of wine,” says Paya. “Our program allows us to give our guests the opportunity to taste as much or as little of our valuable wines as they wish.”

Lucas Paya, wine director for José Andrés ThinkFoodGroup, spent five years as a wine buyer for world-famous chef Ferran Adrià’s highly esteemed restaurant elBulli in Catalonia, Spain.
