Once a barren outpost for salty-dog marlin fisherman and those seeking cheap Mezcal, the Baja port of Cabo San Lucas has been getting a serious upgrade. One of the first hideaways to plant its upscale flag in the white, pristine sand was the Auberge Resort, Esperanza. Its secluded private residences offer sweeping views of the Pacific and Gulf of California and are a favorite of tycoons and celebrities (Jennifer Aniston, Ben Stiller). These three- and four-room villas boast full kitchens, infinity pools and even custom-made pet beds with Rivolta Carmignani Italian linen sheets. But the highlight here is the dining. At the resort’s signature restaurant, Cocina Del Mar, the bounties of the sea are blended with locally sourced ingredients to create the best menu Baja has to offer. And be sure to pair your plate with a bottle from the long list of Mexican wines.
