From Dale Chihuly's sculpture pieces, Lumière d'Ambre, to the seventh-floor city view from the Park Hyatt Hotel, to the restaurant's signature scent—NoMI is a feast for the soul. Chef Christophe David's cuisine, on display in the exhibition kitchen, creates art on the plate as well, allowing guests to discover a bounty of wine pairing possibilities. Wine director Fernando Beteta, who will sit his Master Sommelier test this year, is always on hand to offer guidance about the expansive wine list. In addition to the main room, guests can dine in the lush garden or the Cellar on the Seventh, which is surrounded by soaring columns of wine bottles. What not to miss Hint: The chef's favorite is Crème Brûleé de Foie Gras with an Alsatian Grand Cru Pinot Gris.

Top Bordeaux classics include 1982 Château Mouton Rothschild, 1921 and 1945 Château Margaux, 1929 Château Lafite Rothschild, 1995 Château Pétrus. Hundreds of selections of Champagne, many from smaller growers, but also a vertical of Krug dating back to 1973, in various sizes.
