Long before "eating local" was fashionable, the Herbfarm's owner, Ron Zimmerman, was a champion of the philosophy. The majority of the ingredients that Chef Keith Luce uses come directly from the restaurant's organically managed kitchen garden and nearby farm. To reflect what's freshest that day, the menu is often finalized only hours before service. Recently a suite of outdoor fire cookery stations were added, giving Luce even more creative options. "Drinking local" is an equally held belief; the restaurant lays claim to the world's largest selection of Northwest labels, managed by wine director Lisa Rongren and held in the showcase cellar replete with mahogany holding bins. The emphasis on wine pairing, themed-wine dinners and flights of rare wine is key to the success of this romantic country spot.
