New York’s The Surrey Hotel celebrates the decadent days of the personal bartender.



Manhattan boutique hotel The Surrey delivers its regal Bar Pleiades to guest rooms as a veritable cocktail picnic—including a personal bartender.

Gliding in with an elegant bar cart containing an array of spirits, a whitejacketed mixologist crafts the first round, leaving the recipe and remainder for guests to mix themselves, and can even return to shake up the next round. The program was created for The Surrey by Sims Foster, who attributes the success of the cocktail program to guests’ desire for a new, sophisticated in-room imbibing experience.

“We wanted to elevate the hotel minibar into something that should be expected at a fine hotel,” says Foster. “Many of our guests meet up with their friends in their room for a cocktail before going out, or sometimes, just make a night of staying in.”

Precisely what you’ll feel like doing after tasting drinks like the Patron Silver-based 76th Street, shaken with lime and Fee Brothers orange bitters, or the No. 20, featuring fresh apple juice, small-batch honey and Bombay Sapphire.


A New York institution since 1926, The Surrey Hotel has recently been revamped with dramatic Art Deco finishes and a luxurious in-hotel itinerary. Here is a sybaritic itinerary, just one of many that are possible.

Juice Cleanse

Scrap your routine of late-night dumplings and a four-a-day double Americano habit, and start your stay at The Surrey with a juice cleanse. Take a shot of pure chlorophyll, followed by a chaser you sip slowly: a pear nectar so concentrated it tastes like a dewdrop from Willy Wonka’s garden. This will rejuvenate you just in time for a private Pilates session, also available at the hotel.

Breakfast in Bed

With The Surrey’s 24-hour in-room mixologist service, you’ll likely surrender to the Sferra sheets. Order in a runny Peekytoe Crab Benedict and airy Belgian Waffle with poached strawberries and vanilla bean chantilly from Boulud’s breakfast menu.

Alfesco Afternoon

Where better to imbibe a liquid lunch than on a seasonal roof deck? Order a concentrated serving of carrots, beets, cucumbers, ginger, lemon and leafy greens extracted into a 16-ounce elixir called Veggie Vibrance, which accompanies the Organic Avenue’s Sunflower Falafel dish wonderfully. When you’re finished indulging, an Orange Energizing Exfoliation Polish awaits downstairs.

Sites to See

Head off for a day of museums, starting at the Marlborough Gallery and ending with The Met. But as you make your way down The Surrey corridors, take note of the artwork surrounding you. There’s Jenny Holzer’s xenon projection print, You Are My Own, and the eyes of Kate Moss, woven into Chuck Close’s infamous tapestry of the rawboned beauty staring at you from down the hall. Elsewhere in the building are Richard Serra etchings worthy of inspection.

Nighttime Revelry

Make an appointment at the Surrey Spa for a couples massage, offered in a private suite with plush tables and an incredibly sexy infinity bathtub. After a long soak, with tendons free of tension, make your way down to Café Boulud for a creamy cavatelli punctuated with plump sea urchins and razor clams slivers. The sommelier, Blue Plinkington, selects not-to-be-missed vinos like a 2006 Premier Cru Les Vergers Chardonnay—a crisp cornucopia of golden fruits, subtle caramel and white lily floral with a cool finish.

After your meal, stop by the Bar Pleiades, the Lauren Rottet-designed lounge framed in black lacquer with beige quilted walls and booths upholstered in white sharkskin. Opt for the popular Smash & Grab—Buffalo Trace, lemon, mint and Cuvee Daniel before heading back up for a good night’s sleep.

The Surrey’s Love Cleanse Package: Rates start $574 a night for a minimum of three nights. Includes accommodations, breakfast, lunch and dinner juices, two sixty-minute detoxifying treatments and personal yoga or Pilates session.

Breakfast By Boulud Package: Rates start at $459 per night and include in-room breakfast for two daily and 20% discount off a Surrey Spa treatment.
