Q&A with Chef Stephen Kalt, Chef and Partner of Fornelletto Cucina & Wine Bar

WE tapped the chef and partner of one of America's 100 Best Wine Restaurants to tell us his favorite food trends for 2013.



Wine Enthusiast: With Fornelletto’s wine cellar atmosphere and "50 Under $50" list, the restaurant has a very accessible, enthusiastic approach to wine.
Stephen Kalt: I am a great wine lover and really believe that good wine always enhances a meal.  Besides that, wine makes everyone feel happy and chatty and makes for a fun evening.

WE: What is the best food trend of 2013?
SK: The rise of Peruvian cooking is exciting.  Ricardo Zarate in Los Angeles is leading the way with multiple ceviches, which are everywhere now. His blood sausage with fried egg is transcendent.  Anticuchos, grilled skewers that mirror Japanese robatayaki, are favorites of mine.

WE: What is your favorite food city in the world?
SK: That’s a tough one.  I just ate very well in Rome for a week.  I was introduced to Mumbai by my friend, restaurateur Sanjiv Chona, and had great meal after great meal. There’s a difference between great food and great restaurants. Los Angeles doesn't have that many great nationally-recognized restaurants, although there are some very good chefs, and there’s an incredible wealth and variety of good ethnic cooking.
