Easter brunch meets Caribbean flair at this recently renovated resort. Guests can snack on bacon-wrapped pork loin topped with local rum sauce, blackened snapper with tropical fruit salsa and West Indies seafood curry at Ferdinand’s Caribbean Café, then participate in an Easter egg hunt, beach soccer and volleyball tournament. 

The Pour: Instead of recommending a wine by the glass, Food and Beverage Director Norbert Szalay suggests a strawberry rosé spritzer, combining a Côtes de Provence rosé with soda water, Aperol, lemon juice and sliced strawberries. “It’s a festive way to toast your Easter Sunday,” says Szalay. “Perfect for cooling off after an egg hunt in the Caribbean sun.”
