DeBarr says, “People howl when we don’t have our “Notorious” Bacon Sundae with bacon fat caramel sauce,” which pairs with Madeira or PX Sherry, or a Très Vieux Pineau des Charentes.

"The Mean Green Island, [a dish consisting of an] arborio rice cake, [with] duck broth, cold crab-sweet chili salad, wasabi caviar, fried shallots, seaweed, and sesame seeds, is rounded out by slightly sparkling Ameztoi Rubentis Txakolina, 2011, from the Basque Region of Spain," says Paul Artigues, chef and owner.
