“Rendezvous Farms, the nearby farm that provides us with the majority of our meats and veggies, delivered a huge pile of gorgeously bright red peppers one day last summer,” says Executive Chef Robert McCormick. “I was inspired to use them to create a spin on a goulash, placing the wagyu beef tenderloin as the star of the dish. The spaetzle finished off the goulash effect, making a filling but lighter summer meal with lots of color and local personality.” The wine team suggests pairing the dish with Gaja’s 2004 Rennina Brunello di Montalcino.
