Cuisine Description

The progressive farm-to-table menu changes daily in concert with available produce sources from farms located one hour from the restaurant. Five- and seven-course tasting menus are available. Wine is viewed as a key component of the dining experience, and the menu is specifically designed to support this view.

In addition to a stellar wine list, The Ashby Inn & Restaurant grows vegetables and herbs in an onsite garden to infuse dishes and drinks. Read more about their garden.

Riot-Worthy Dish
Wine Enthusiast editors asked America's 100 Best Wine Restaurants of 2012 "which dish would start a riot if it was taken off the menu?" Their riot-worthy dish is…
"Instead of a signature dish, the eatery has a signature purveyor—Martin’s Angus Beef of the Plains. “Their beef is the finest grass-fed and grain-finished found anywhere, and lends itself to beautiful pairings with many Bordeaux blends produced locally,” says Neal J. Wavra, innkeeper and sommelier."
Perfect Pairing
At one winemaker dinner, an oaky Linden Vineyards’s 2009 Hardscrabble Chardonnay was paired with a risotto-like barley smoked over wine-barrel oak chips, served with toasted sunflower seeds and crisped chicken skin.
