If you’ve always thought of Port as a cozy after-dinner drink in front of a warm fireplace…think again. Breaking three hundred years of tradition, Croft Pink, with a crisp, fruity taste and a deep rose’ hue, is meant to be served chilled in a wine glass, or mixed into a pre-dinner cocktail. If you agree with the late Percy Croft’s declaration, “Any time not spent drinking Port is a waste of time,” then Croft Pink may just become your new drink of choice. Valentine’s Day is the perfect occasion to drink Pink! The delightful and refreshing Paloma Rosa was created by Neyah White of San Francisco’s Nopa.

Paloma Rosa

1 ounce Croft Pink Porto

1 ½ ounces Blanco Tequila

2 ounces grapefruit juice

1 ounce soda water

dash of simple syrup (as needed, depending on the sweetness of the grapefruit)

1 lime wedge, as garnish

Pour all of the ingredients into an ice filled mixing glass, stir briefly, and strain into an ice filled Collins glass. Add the garnish.
