| Description: | Raita is a good, cooling accompaniment to hot and spicy foods. |
| Ingredients: | 1 1/4 cups plain yogurt 1/2 teaspoon sugar 1/4 teaspoon salt 1/8 teaspoon cayenne pepper 1 carrot, peeled and grated 2 teaspoons olive oil 1/2 teaspoon cumin seeds 1/4 teaspoon brown mustard seeds 2 tablespoons golden raisins |
| Directions: | Put yogurt in a bowl and mix with fork until smooth. Mix in sugar, salt, cayenne pepper and carrot.
Heat oil in a small pan over medium-high heat. When hot, add the cumin and mustard seeds. When the seeds begin to pop, add the raisins and stir a few seconds, until plump. Remove from heat. Add the mixture to the yogurt and stir. Transfer to a plastic container and keep chilled until ready to use. |
