Chef Mike Sabin of Prime One Twelve on Flying in Rare Fish
Our Hawaiian Tuna Poke dish is refreshing, perfect for Miami nights since it’s served in a bowl over ice. But what makes the dish special is that it features four ounces of fresh Hawaiian bigeye tuna with limu seaweed, macadamia nuts and soy sauce. Using this superior (and expensive) fish translates into one of the most flavorful and fresh dishes we’ve ever created. But bringing in 300–350 pounds of Hawaiian bigeye tuna each week is no easy feat—though it does make Prime One Twelve the largest purchaser of the rare Hawaiian fish in the country. The restaurant requires the superior ingredient be shipped overnight to the restaurant three times per week. As opposed to the standard bigeye tuna seen on many local menus, Hawaiian bigeye tuna is wild-caught by skilled longline fishermen. The tuna is brought to the prestigious Honolulu Fish Auction, the only fresh tuna auction in the U.S., and we work with a buyer in Hawaii to choose the best of the bunch. Our Poke dish is a perfect example of our philosophy: to bring the best ingredients to our customers.
