Technique: Egg Whites
Cocktails made with raw eggs are all the rage for courageous mixologists across the country.
TECHNIQUE: Egg Whites
Crack one egg, separating the whites from the yolk. Take a bar strainer and remove the spring (if you don’t have a strainer, use a cocktail fork). Pour egg white into the shaker. Pop the spring into the shaker, place shaker top on and shake vigorously until the egg white is whipped. The egg white will transform into foam that coats the glass.
Try this egg white-based cocktail: Prado
1½ ounces Blanco Tequila
½ ounces Maraschino liqueur
1 ounce pomegranate juice
Dash of simple syrup
Juice of whole lime
½ egg white
Soda to top
Lime peel for garnish
Combine ingredients in shaker with ice and shake well. Strain into a highball glass with ice, top with soda and garnish with lime.
