Evanston, IL: Candid Wines Dinner at Quince

Quince restaurant will partner with Candid Wines, a Chicago-based distributor of organic, biodynamic and small family owned wineries, for a dinner on Thursday, October 25. A four course menu has been created by Executive Chef Andy Motto and Candid has paired each dish with a varietal they recommend. Motto's cuisine for the evening includes Rouget, Wild Boar, 24-hour Braised Short Rib, and Profiterols. The preparations and wine pairings are outlined below.

Course One
Wine: La Pietra di Tommasone “Pithecusa Bianco”
Cuisine: Rouget, Caper, Plum, Piquillo Pepper, Parsley

Course Two
Wine: Boisfranc “Beaujolais Superior”
Cuisine: Wild Boar Nicoise

Course Three
Wine: Turner-Pageot “Le Rouge”
Cuisine: 24 hour Braised Short Rib, Chipotle, Chocolate, Date, Hazelnut, Squash

Course Four
Wine: Schwibinger 1999 “Pinot Gris Auslese” 500ml
Dessert: Profiterols, Black Truffle, Pear, Apricot
