Quince restaurant will partner with Candid Wines, a Chicago-based distributor of organic, biodynamic and small family owned wineries, for a dinner on Thursday, October 25. A four course menu has been created by Executive Chef Andy Motto and Candid has paired each dish with a varietal they recommend. Motto's cuisine for the evening includes Rouget, Wild Boar, 24-hour Braised Short Rib, and Profiterols. The preparations and wine pairings are outlined below.
