Veteran winemaker Joe Davis holds back wines like this Chardonnay longer than most, revealing wondrous maturity once uncorked. This shows whipped vanilla cream, marzipan, walnut and baked apple scents on the unctuous nose, while similar butter and meringue flavors show on the palate. Underlying acidity and chalky tension keep it fresh and mouthwatering.
