An apprenticeship at Rogue Distillery and Public House led Heim to join Eastside in 2012. Since then, the company has acquired MotherLode Craft Spirits in March and Big Bottom Distilling in May. One of a handful of female distillers in the country, Heim oversees the production of top sellers like Burnside Bourbons, Portland Potato Vodka and Below Deck Coffee Rum. “Distillation is science,” she says. “The art comes in with the aging process. The value is added afterwards.”
