 Cucina will hold a Poliziano wine dinner on Monday\, January 28. The eveni
 ng will explore Tuscan wines paired with authentic Italian cuisine. The ev
 ening will begin at 6:30 p.m. with a welcome reception\, followed by a sea
 ted dinner at 7 p.m. Executive Chef Kevin Abshire has prepared five course
 s (duck confit\; cod and polenta brandade\; cavatelli with smoked capon an
 d Cotechino sausage ragu\; braised short rib\; chef&rsquo\;s hand-picked s
 election of small farm cheeses with in-house made jams) that pair well wit
 h each varietal. The fee to attend is $85 per guest\; tax and gratuity exc

 <p>\n	<em>Poliziano is located on the slopes below Montepulciano near the 
 village of Gracciano. On these ridges\, at the best altitudes and position
 s\, are the vineyards of Vino Nobile di Montepulciano. The Poliziano Estat
 e was founded in 1961 and today consists of over 500 acres. After taking h
 is degree in agriculture\, Federico Carletti worked in northern Italy. In 
 1980\, he returned to Tuscany and began working full time on his father&rs
 quo\;s estate. In the past two decades\, Federico has created some of the 
 finest wines in this top quality wine-producing area. Federico chose the n
 ame &ldquo\;Poliziano&rdquo\; because he loved the work of a renowned nati
 ve poet\, Angelo Ambrogini. Angelo was known as Il Poliziano\, because he 
 came from Montepulciano. Angelo&rsquo\;s portrait hangs in the tasting roo
 m in the center of the estate. Some of Poliziano&rsquo\;s wines\, such as 
 Le Stanze\, were named after the poet. Federico thinks of himself as a far
 mer\, because he is &ldquo\;convinced that fine wines originate in the vin
 eyard. Selected clones\, planting layouts\, rootstock\, pruning methods an
 d training systems are chosen with the sole object of ensuring the quality
  of the grapes. This is the starting point for my wines: they are made onl
 y from grapes grown on the estate\, respecting their original vintage and 
 the typicality of the area they come from.&rdquo\;&nbsp\;</em></p>\n<p>\n
