Dátiles con Béicon (Dates stuffed with almonds and Valdeón, wrapped in bacon)

Adapted from Executive Chef Seamus Mullen of Boqueria in New York
  • 8 Medjool dates
  • 8 marcona almonds, toasted
  • 8 teaspoons of Valdeon or Cabrales blue cheese
  • 4 slices of bacon, cut in half lengthwise
  • 8 toothpicks

Pre-heat oven to 400 degrees. Cut each date along one side. Remove the pit and replace it with a toasted marcona almond. Place a teaspoon of the cheese inside the date and close it. Wrap each date with half a slice of bacon and secure it with a toothpick. Bake in a 400-degree oven until golden brown.
