Yogurt Raita

Leslie Trautman

Raita is a good, cooling accompaniment to hot and spicy foods.

  • 1 1/4 cups plain yogurt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1 carrot, peeled and grated
  • 2 teaspoons olive oil
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon brown mustard seeds
  • 2 tablespoons golden raisins

Put yogurt in a bowl and mix with fork until smooth. Mix in sugar, salt, cayenne pepper and carrot.

Heat oil in a small pan over medium-high heat. When hot, add the cumin and mustard seeds. When the seeds begin to pop, add the raisins and stir a few seconds, until plump. Remove from heat. Add the mixture to the yogurt and stir. Transfer to a plastic container and keep chilled until ready to use.
