This local-leaning restaurant’s almost 6,000-bottle wine list skews heavily toward Napa, with bottles that date back to 1935. Wine Director Victoria Kulinich’s list includes classic producers and talented newcomers. The eatery hosted its third-annual Young Winemakers’ Dinner this year, benefitting Auction Napa Valley.

Riot Dish: “We do not have a signature dish or dishes that remain on our menu since we’re always evolving. One dish that comes to mind where returning guests who have had a version of it, still rave is the ‘Potato Beeswax.’ It consists of potatoes cooked in beeswax, potato puree, sorrel nori gravel, and fresh sorrel juice. It is so tasty.”
