Weather-wise, April is the cruelest month—thawed by the sun one day, slammed by the last of the arctic blasts the next. To help even out this bipolar season, mix up Pinewood Social’s The War of the Pacific. The blend of a hearty aperitivo and a light, warm-weather pisco makes it the perfect palate bridge between winter and summer. 


About the Bar

Nashville’s Pinewood Social just became one of our favorite bars on earth. It’s 13,000 square feet, yet is still warm and intimate, with white-painted brick walls, comfy booths and a series of nooks for private hanging (and, if desired, karaoke). Beyond the approachable but palate-challenging cocktails, it has a well-curated wine-and-beer list and a kitchen run by former Catbird chef, Josh Habiger. Bonus: There’s a six-lane bowling alley in the back. 

The War of the Pacific

2 ounces Pisco 100
½ ounce Cappelletti Vino Aperitivo
1 ounce grapefruit juice
¾ ounce lime juice
¾ ounce simple syrup
1 egg white
Dash of Angostura bitters

Combine all ingredients in a shaker with no ice and shake until the sugar and citrus begin to meringue. Strain into a collins glass with ice. Garnish with Angostura bitters on top and twirl for aesthetics.
