It's one of seven eateries gracing a gaming complex that was just a bingo hall when opened by the Forest County Potawatomi Community in 1991. In 2008, the thriving casino underwent a $240 million renovation; Dream Dance got a makeover that combines upscale decor with Native American art. Chef Jason Gorman's New Wisconsin Cuisine is seasonal and oh-so-deliciously local. (Think Lobsterwurst\u2014lobster, scallop and shrimp terrine with traditional "wurst" seasonings, with mascarpone pierogies and morels, paired with Pierre Peters Blanc de Blanc Grand Cru Champagne.) Christian Damiano, restaurant ops manager and sommelier, designed the cellar, with all 900 selections priced at or near retail.
