Though this variety is a rarity in Washington, it makes absolutely thrilling wines. But no one does it quite like Animale. The aromas offer notes of purple flower, tangerine peel, black pepper and musky fruit. The generous, palate staining flavors are achingly pure, enlivened by tart acidity. It's gorgeous. Pair it with a rack of lamb with a cherry glaze. Sean P. Sullivan
