Auld 2017 Strawbridge Cabernet Sauvignon (Barossa Valley)

Five years of bottle age—at the time of tasting—and this Cab has hit its stride. Still fresh with heady, primary-fruit aromas of red currant and cherry, it offers layers of herb and spice, seaweed, chocolate and a slight meat jerky nuance. The palate is has melded into a medium (plus) wine, wound in well-placed, savory tannins. Tangy red fruit, soft spice and a frame of oak all sit harmoniously together. Pair with high protein foods—grilled lamb chops come to mind. Christina Pickard
