Though from the Old World, Frenchmen-turned-Californians Arnaud and Guillaume Fabre buck tradition with this blend of 64% Chardonnay and 36% Sauvignon Blanc, aged in 30% new French oak. The result is aromas of crushed red apple, peach and green chile followed by a palate that's both round with guava and apple and yet brisk with grass, lime pith and a cement-like grip. Matt Kettmann
