Bodegas Caro 2002 Cabernet Sauvignon-Malbec (Mendoza)

After an earthy, aggressive, almost sweaty start, this joint-venture red from Nicolas Catena and Eric de Rothschild finds its course and manages to improve. The palate is full of acid-driven, amplified cherry and plum flavors, and while there's a hint of buttery oak resting on the finish, that should subside with airing and a good food pairing.
