This blend of 50% Roussanne, 32% Viognier, 10% Chardonnay and 8% Marsanne only grows more fascinating as it sits open for days. It starts with tight citrus peel, but also ripe melon and smoked peach on the nose. The palate goes savory, with chamomile and more subtle smoke, making it an excellent white-wine choice for roasted chicken, rich fish or even pork. Matt Kettmann
