Heady notes of wild honey, pink grapefruit, red apple, jasmine—along with an intriguing wet-stone minerality—open this cloudy apricot-hued Pét-Nat. The palate is dry, tangy and textural. There's some richness here, but it's barely felt amidst the tingly acidity, which, alongside the bouncy bubbles, makes the mouth water, and another sip an incredibly easy endeavor. Composed, but barely hiding a wild streak, this is characterful and downright delicious. Christina Pickard
