Single barrel offerings are rare in Cognac; a mere 412 bottles were produced from this particular barrel of 21-year-old brandy. The liquid is dark amber, with a warm, concentrated caramel aroma. The palate echoes that caramel along with darker toffee, drying to oaky tea-like notes midpalate, then finishing spicy and warm, with lingering vanilla. Chai No. 8 means “Cellar No. 8,” where the barrel was stored. Kara Newman
