This wine was fermented in concrete and neutral barrels and aged on lees for 20 months. Its light herb and citrus aromas lead to a medium-bodied palate that's tart, bracing and white grapefruit-like. With acidity like this, it absolutely needs food. Oysters would make an excellent pairing. Sean P. Sullivan
