From its salmon pink color to its peach fuzz finish, this traditional method sparkling wine is a showstopper. The wine's raspberry and powdered sugar aromas are followed by a wave of citrus and saline notes. Flavors like tangerine and strawberry do a tango with electric acidity and those final finishing notes of peach fuzz and wet rock. This blend of Pinot Noir, Chardonnay and Pinot Blanc spent six months in neutral oak, with 30 months en tirage. Disgorged December 21. Michael Alberty
