This combines a Berliner weissbier base with an incredibly unlikely vegetable (beets) to astounding effect. A deep crimson color, it's a magical marriage of sour and earth from start to finish, in endless layers of complexity. The bouquet opens with a distinctly earthy note, lightly vegetal and rooty, with a freshly tilled-soil top note and a hint of barnyard funk. The palate initially expresses its tart base-style soul, sour and sweet at once, but then veers back into the rooty vegetal realm. The finish boasts distinguished, complex and thoughtful notes of turned earth and moist dirt. The mouthfeel is crisp, dry and refreshing, with bright carbonation and an acidic, sour twang that somehow keeps the whole experience vibrant and clean. Lauren Buzzeo
